Chicken and Pineapple Stir-fry

I love food with a bit of a tangy taste and this is one of my quick and easy dinners.

Ingredients
2 chicken breasts sliced in to strips
Half a pineapple, peeled and sliced
One handful of fresh coriander leaves chopped
3 cloves garlic fine chopped
1 large brown onion quartered
1 red capsicum sliced in to strips
1red chilli seeds removed and sliced
1 tablespoon soft brown sugar
3 tablespoons gluten free tamari sauce
2 tablespoons ume vinegar

Method

Lightly brown the garlic and onions in a pan and add the chicken when the onion starts to sweat. Stir through until chicken is seared on all sides.

Add tamari sauce, ume vinegar, fresh chilli and pineapple and cook on medium heat for four to five minutes.

Add brown sugar and a little water and keep on medium until the sauce starts to caramelise.

Add capsicum and stir fry until its cooked. Toss in the coriander leaves and turn off heat.

I usually squeeze half a lime and add salt to taste.

Serve with steamed rice. I’m loving red rice at the moment.

Grilled Shrimp with Lemon Butter Sauce

 

Grilled Shrimp with Garlic Butter Sauce
Super easy and so fancy!

 

One thing that annoys me the most: guests who know that I have food allergies and then expect to eat bad (synonym “healthy”) food at my house. Gluten-free food is healthy and naturally delicious because it doesn’t contain a lot of the “stuff” that gum up our digestive tracts. One simple and tasty appetizer idea: steamed or grilled shrimp with garlic lemon butter sauce.

Ingredients

  • Shrimp
  • Butter
  • Salt
  • Pepper
  • Garlic
  • Lemon

Only six ingredients (unless you want to add other seafood to the mix). Steam the shrimp. I do it in the rice cooker on a steaming rack. Grilling is fine too if you have a clean non-sauce-contaminated grill.

The sauce is simple but involved a little bit of practice when it comes to controlling heat. Mash garlic and salt in mortar or chop finely. The salt makes the garlic literally melt. Squeeze lemon juice. Go easy on amount of lemon juice unless you like your food really tangy. Melt butter slowly in pan. Slowly (if you need to, *very* slowly) add the garlic and the lemon juice. Be careful not to burn!
